Following memorable stints at Mugaritz in Spain and then in New York, he returned to Paris to take charge of L’Agapé Substance before spending a year travelling around the world. In 2013, he opened his own restaurant in Les Invalides, which was quickly recognised: 1 Michelin star in 2015, 2 stars in 2019, and 4 Gault & Millau toques.
